beh, rimuovilo a manina :)
adb remount
adb shell
rm /system/app/Mail.apk

Come ho rimosso gli altri (a manina) così ho provato a rimuovere anche Mail.apk

Il risultato: rm: can't remove '/system/app/Mail.apk' : No such file or directory

beh dai:
ls /system/app
e cerca nel risultato un apk che abbia un nome simile a Mail.apk.
Magari ha un altro nome...
